200 gr spinach
80 gr tuna
1. Combine eggs, salt and pepper in a bowl, and beat the eggs. Set aside.
2. Heat oil in a skillet. Add the spinach and diced tomatoes. Cook, uncovered, over medium heat about 5 minutes or until vegetables are cooked. Stir occassionally.
3. Pour egg mixture over the vegetable mixture in skillet. Cook over medium heat. As mixture sets, run a spatula around the edge of the skillet, lift the egg mixture so uncooked portions flow underneath. Continue cooking on low heat until egg mixture is almost set.
4. Add the tuna and heat until the tuna is heated through.
